Summer Fruit Salad

Ingredients

2 cups rice cooked, cooled to room temperature
1/2 cup strawberries quartered
1/2 cup grapes halves
1/2 cup kiwi fruit quartered slices
1/2 cup pineapple tid-bits
1/2 cup banana sliced
1/4 cup pineapple juice
2 tablespoons yogurt, plain
1 tablespoon honey
1 x red lettuce leaves

Directions

Combine rice and fruits in large bowl.

Blend pineapple juice, yogurt, and honey in small bowl; pour over rice mixture.

Toss lightly.

Serve on lettuce leaves.
