Strawberries and spinach are one of those pairings that sounds unusual until you try it. The peppery bite of fresh spinach plays off the juicy sweetness of ripe berries, and a sharp raspberry vinegar dressing ties the whole thing together.

Finely chopped shallots add a mellow, almost floral onion note without overpowering the fruit. Arrange the strawberry slices in a spiral on top and you’ve got a salad that looks like a magazine cover in about 15 minutes.

This is spring eating at its simplest and best. No cooking, no fuss, just good ingredients doing what they do.

Variations

  • Add crumbled goat cheese or feta for a creamy, salty contrast that makes this a more substantial side.
  • Toss in toasted pecans or sliced almonds for crunch.
  • Swap raspberry vinegar for balsamic if that’s what you have on hand. The flavor shifts a bit darker but works beautifully.

Directions

Strawberries need not be confined to desser Make a salad dressing by combining vinegar, oil and water. Add chopped shallots and pepper to taste. Arrange sliced strawberries in a spiral formation on the spinach and drizzle with the dressing.
