Steamed Salmon Sauce

Ingredients

1/4 cup onions chopped
4 each italian plum (roma) tomatoes canned, chopped
2 each garlic cloves minced
1 x salt and black pepper to taste
1 tablespoon orange zest grated
4 each salmon fillets skinless
1/2 cup orange juice
1 teaspoon olive oil, extra-virgin
1/2 cup white wine
4 each basil

Directions

IN A SMALL SAUCEPAN SIMMER 1/4 CUP CHOPPED ONIONS,2 MINCED GARLIC CLOVES,AND 1 TABLESPOON FINELY GRATED ORANGE ZEST IN 1/2 CUP ORANGE JUICE AND 1/2 CUP WHITE WINE UNTIL REDUCED TO 1/4 CUP.

ADD 4 CHOPPED CANNED PLUM TOMATOES AND SALT AND PEPPER TO TASTE.

SEASON FOUR,FOUR OUNCE PIECES OF SKINLESS SALMON FILETS WITH SALT AND PEPPER,AND DRIZZLE WITH ONE TEASPOON VIRGIN OLIVE OIL.

TOP EACH PIECE OF FISH WITH A BASIL LEAF AND PLACE ON THE SIMMERRING SAUCE.

COVER AND STEAM FOR EIGHT TO TEN MINUTES,UNTIL THE FISH I OPAQUE AND FLAKES TO A GENTILE TOUCH.

Chicken Korma

This is a very tasty dish. I was even missing a few ingredients, the cloves and green cardamon (i had to use ground). Be very careful not to burn the onions. Watch them closely when it gets close to time for them to be done. Do Not use packaged saffron rice if you can't find any saffron. Use Jasmine or Basmati instead.
