1 hrsPork and stone fruit are a timeless pairing, and this roast leans into that tradition. A six-pound pork loin gets basted repeatedly with a glossy apricot-honey glaze, building a caramelized, amber crust while the lean meat stays tender inside.
The glaze comes together fast in the microwave. Dried apricots soften with cinnamon, lemon, and water, then get blended with apricot nectar, orange juice, and honey. The lemon cuts through the sweetness so the finish reads tangy-sweet rather than dessert-like.
Basting is the whole game here. Brushing glaze on every 10 to 15 minutes builds layers of fruit-sugar lacquer without burning, since each coat has time to set before the next goes on.
Pork loin is lean, so pulling it at the right temperature matters. Aim for 145°F (63°C) in the thickest part and let it rest 10 to 15 minutes tented in foil before slicing. The juices redistribute during the rest, turning what could be dry into succulent.
Pro Tips
- Position the thickest part of the roast toward the outside of the turntable or the hottest zone of the oven so it cooks evenly.
- Don’t brush glaze on in the first 20 to 30 minutes. Early sugar burns before the meat develops its crust.
- Deglaze the pan drippings with a splash of stock and a spoon of glaze for a built-in pan sauce.
Variations
- Use dried peaches or cherries in place of apricots for a different fruit profile.
- Stir a tablespoon of Dijon mustard into the glaze for a sharper edge.
- Add a pinch of cayenne or red pepper flakes for a sweet-heat finish.
