Unflavored Knox gelatin dissolved in pineapple juice sets the whole thing into a sliceable mold. The heated juice blooms the gelatin and the cold water hydrates it first so you don’t end up with rubbery clumps in the finished salad.
The combination of cottage cheese, sour cream, mayonnaise, and whipped cream sounds like overkill, but each one does something different. Cottage cheese adds protein and mild tang, sour cream brings richness, mayo gives body, and whipped cream lightens the whole texture.
A squeeze of lemon juice at the end keeps it from tipping too far into cloying sweetness. It’s a small addition that makes a noticeable difference.

Directions
Dissolve Knox gelatin in cold water.
Add ½ cup pineapple juice which has been heated.
Mix all remaining ingredients together. Add gelatin mixture.
Mix well. Pour into container of choice. Chill until set.
