75 minThis party-sized chocolate date cake fills two loaf pans and slices into 25 servings, which makes it a natural fit for potlucks, bake sales, and holiday gatherings. Soaked dates give the batter a dense, sticky sweetness, while cocoa adds a subtle chocolate backbone that plays off the topping of chocolate chips and nuts.
Pour boiling water over the cut dates and let them cool completely before mixing them in. The hot water softens the dates into a jammy paste and creates a dark, sweet liquid that becomes part of the batter. Adding the baking soda to this date mixture right before combining causes an immediate fizz that lightens the heavy batter.
The streusel-style topping of sugar, chopped nuts, and chocolate chips goes on raw before baking. As the cake rises, some of that topping sinks slightly into the surface while the rest crisps up, giving you a crunchy, melty layer on every slice.
Kitchen Tips
- Cut the dates into small pieces, about the size of raisins. Large chunks won’t soften fully in the water and create dry pockets in the cake.
- Don’t skip cooling the date mixture before adding it to the batter. Hot liquid will partially cook the eggs on contact.
- Serve warm, as the recipe suggests. The chocolate chips on top are still gooey and the cake has a pudding-like texture fresh from the oven.
- Wrap cooled leftovers tightly. The dates keep the cake moist for 3-4 days at room temperature.
Variations
- Add a teaspoon of espresso powder to the batter to deepen the chocolate flavor.
- Swap the chopped nuts for pecans or toasted almonds.
- Drizzle with caramel sauce instead of whipped cream for a richer finish.
