Prosciutto with figs and melon: thyme-dusted fresh figs wrapped in honey-dipped prosciutto strips, arranged with thin-sliced ripe melon. A no-cook Italian antipasto.

30 minClassic Italian antipasto that relies entirely on ingredient quality. When ripe figs, good-quality prosciutto di Parma, and a perfectly ripe melon are within reach, this plate shows them off with nothing to hide behind.
The small twist here is the honey-and-thyme treatment. Fresh figs get dusted with chopped thyme, then wrapped in prosciutto strips that have been lightly dipped in thinned honey. The honey clings to the outside of the ham, giving a faint sweet glaze that amplifies the prosciutto’s savory edge without making it sticky. Thyme brings an herbal note most fig-prosciutto pairings skip.
The composed plate alternates the wrapped figs with raw fig wedges and thin slices of chilled melon for color and texture contrast. Serve on chilled salad plates so the fruit stays cold and fresh until the first bite.
Chef Tips
- Use genuinely ripe figs. An unripe fig tastes like a grassy nothing and will ruin the plate.
- Slice prosciutto paper-thin. Thick slices overpower the fruit and turn chewy.
- Thin the honey with warm water until it’s the consistency of light syrup. Straight honey is too sticky to coat evenly.
- Assemble at the last possible minute. Wrapped figs held too long get weepy and lose their sheen.
Variations
- Swap thyme for fresh basil or a scatter of torn mint leaves.
- Substitute fresh berries, ripe pears, or peaches when good melon isn’t in season.
- Finish with cracked black pepper, a drizzle of aged balsamic, or shards of Parmigiano.
Ingredients
Directions
Take six of the figs and slice them into six even wedges.
Dust wedges lightly with thyme.
Thin honey with water and dip prosciutto slices in it.
Cut prosciutto into ¼ inch strips and use them to wrap up thyme-coated fig slices.
Cut melon into thin slices.
Just before serving, cut remaining figs into 6 wedges and arrange them on chilled salad plates with ham-wrapped figs and melon slices.
Note: If good melon is not available, substitute fresh berries or other fruits.
