3 hrsPistachio ambrosia (sometimes called Watergate salad) is the pale-green potluck staple that somehow ends up on every church supper, picnic, and family reunion table. Canned fruit cocktail, pineapple chunks, and mandarin oranges get folded into a fluffy mix of pistachio pudding, sour cream, and whipped topping. No baking, no fuss, feeds a crowd of 16.
The real sleeper trick is using the reserved fruit juices to dissolve the instant pudding mix. Most recipes have you use milk. Swapping in the fruit juice amplifies the fruit flavor through the entire salad, and turns the pudding into a tangy, sweet sauce that coats every chunk.
Sour cream is non-negotiable in the classic version. It balances the sweetness of the pudding and canned fruit, adding a tang that keeps the salad from tasting like melted dessert. Whipped topping brings lightness and lift.
Kitchen Tips
- Drain the fruit thoroughly and reserve the juice. Undrained cans turn the salad watery.
- Chill at least 3 hours, ideally overnight. Flavors meld and the texture sets properly.
- Add pecans just before serving. Mixed in early, they lose their crunch.
- For a clean look, rinse mandarin oranges briefly before folding in. They stain everything pale orange otherwise.
Variations
- Fold in 2 cups mini marshmallows for the ultra-traditional “Watergate salad” version.
- Swap pecans for salted pistachios to double down on the pudding flavor.
- Add a handful of shredded coconut for the classic ambrosia treatment.
