15 minThis pineapple ginger sauce comes together in about 15 minutes and uses no added oil or fat. Garlic and fresh ginger get sauteed in a splash of water (yes, water, not oil), then unsweetened pineapple juice and soy sauce join the party. A quick cornstarch slurry thickens it all into a glossy, clingy sauce that coats whatever you put it on.
The balance here leans sweet and savory with a ginger kick. Pineapple juice does the heavy lifting on sweetness, so using the no-sugar-added variety keeps it from going candy-like. The soy sauce grounds everything with salt and umami, pulling the flavors together.
Sauteing the garlic and ginger in water rather than oil means the aromatics soften without browning. You get their flavor without any richness competing with the clean, bright pineapple. It’s a smart trick if you’re watching fat intake but still want bold taste.
This sauce works beautifully over grilled chicken, pan-seared tofu, shrimp stir-fry, or drizzled over rice bowls.
Pro Tips
- Dissolve the cornstarch in cold water before adding. Hot liquid will clump it instantly into lumps you can’t fix
- Start with less cornstarch if you want a thinner glaze. You can always add more, but you can’t thin it gracefully once it’s set
- Use fresh ginger, not dried. Fresh ginger has a sharp, citrusy bite that dried powder just can’t replicate in a quick-cook sauce like this
Variations
- Add a teaspoon of rice vinegar for a tangy, sweet-and-sour profile
- Stir in red pepper flakes or sriracha for a spicy pineapple glaze
- Replace pineapple juice with orange juice for a citrus-ginger version
