1 hrsPineapple fudge chill is the kind of three-ingredient dessert that your grandmother probably made on a tight budget and your dietitian would approve of today. A packet of chocolate milk mix, a half cup of crushed pineapple, and a splash of vanilla stir together in a bowl, get spread into a foil pan, and go into the freezer until firm.
The result is somewhere between frozen fudge and a tropical sorbet cube, cold and sweet with tart bits of fruit suspended in a loose chocolate matrix. It will not win any dessert competitions, but it scratches an ice-cream craving at maybe a tenth of the calories.
Serve straight from the freezer in small squares, or scoop into a bowl like soft-serve for a quick after-dinner sweet. Ideal for kids’ snack duty, low-calorie dessert cravings, and summer afternoons when the freezer is the best room in the house.
Variations
- Swap crushed pineapple for crushed strawberries, raspberries, or mandarin oranges for different fruit notes.
- Use vanilla ice cream mix or hot cocoa mix in place of chocolate milk mix for a lighter or richer version.
- Drizzle melted chocolate on top after freezing for a chocolate-shell topping.
