Pineapple cheese mold is the kind of retro recipe that lived on every Midwest church potluck table from the 1960s through the 1990s. Sugar-free orange Jell-O gets dissolved, then enriched with cottage cheese, plain yogurt, and crushed pineapple for a creamy, fluffy mold that splits the difference between dessert and salad.

The artificial sweetener and sugar-free Jell-O make this a diet-friendly version of the original, which traditionally used full-sugar gelatin and sweetened condensed milk. Cottage cheese is the workhorse ingredient. The curds keep the mold from feeling like jiggly Jell-O alone, adding protein and a custardy quality.

This sets up firm enough to unmold cleanly onto a serving plate. Garnish with mint or fresh fruit for the classic presentation.

Kitchen Tips

  • Drain the crushed pineapple thoroughly. Excess juice prevents the gelatin from setting properly.

Directions

Dissolve jello in boiling water, stir in the cold water and refrigerate until syrupee.

Combine all except the crushed pineapple, blending well until smooth.

Add to gelatin mixture. Stir in crushed pineapple.

Pour in mold or pan or cups.

Chill until firm, about 2 hours.
