Phaalse Ka Sharbat is one of those traditional Indian summer drinks that locals reach for when the temperature climbs and a glass of water just isn’t going to cut it. Originally made with falsa berries, a deep purple Indian fruit similar to blackberries, this version uses blackberries for accessibility outside South Asia and delivers the same ruby-red, mouth-puckering brightness.

The technique is essentially cold-infusion. Soaking the blackberries overnight in water draws out their color and tannic flavor without any cooking, preserving the fresh fruit notes that boiling would destroy. Mash and strain the next day to capture all the juice while leaving behind the seeds.

The pinch of salt is the unexpected ingredient that makes this work. Without it, the drink tastes flat and one-note. With it, the salt amplifies the natural fruit sugars and acidity, the same trick used in Mexican aguas frescas and Indian nimbu pani. Top with crushed ice and a slice of pineapple for visual contrast and a tropical edge against the dark berry color.

Kitchen Tips

  • Use ripe, dark blackberries for the deepest color and most intense flavor.
  • Strain through a fine mesh sieve or cheesecloth to remove all the seeds for the smoothest finish.
  • Adjust sugar to taste, falsa is naturally tart and the drink should keep that pucker.
  • Serve in clear tall glasses to show off the deep purple-red color.

  • Add a splash of lime juice for extra brightness and acidity.
  • Stir in a pinch of black salt (kala namak) for a more authentic Indian flavor profile.

Directions

Soak the blackberries in the measured water overnight.

Mash the blackberries into the water, then put the mixture through a sieve.

Add sugar and salt and mix thoroughly.

Refrigerate the mixture for about 30 minutes.

Serve in tall glasses, topped with crushed ice and garnished with pineapple.
