2 hrsRipe strawberries don’t need much help, but a splash of sweet vermouth and fresh orange takes them somewhere unexpected. This no-cook dessert macerates halved berries with paper-thin orange slices (rind and all) in a mix of orange juice and vermouth, then chills until the flavors merge.
Slicing the orange as thin as possible with the rind still on is what makes this work. The rind softens during the two-hour chill, adding a slight bitterness that balances the berry sweetness. You get citrus oil from the zest, juice from the flesh, and a subtle herbal warmth from the vermouth all in one bowl.
This is a great option for anyone watching sugar intake. The recipe lets you taste first and sweeten only if needed. Peak-season berries usually have enough natural sweetness on their own. Stir the bowl gently a few times while it chills so every berry gets coated.
Pro Tips
- Start with room-temperature berries. Cold fruit absorbs less flavor during maceration
- Use a sharp knife or mandoline for the orange slices. They should be almost translucent
- Sweet vermouth has herbal notes that pair naturally with strawberries. Don’t substitute dry vermouth, which would taste too sharp here
- Serve in clear glass dishes to show off the colors
Variations
- Replace vermouth with Grand Marnier or Cointreau for a classic strawberries-in-liqueur dessert
- Add a few fresh mint leaves during the chill for a cool, herbal note
- Spoon over vanilla ice cream or angel food cake for a dressed-up presentation
