Pear and avocado might sound like an odd pairing for a dessert, but blended together they create a silky, naturally creamy mousse that needs no dairy, no eggs, and no cooking. The ripe pear brings sweetness and floral notes, while the avocado contributes pure body and richness without any detectable avocado flavor.

Dark rum and orange zest push this into tropical territory, and a dash of allspice ties the warm, spiced notes together. Chopped peanuts blended into the mix add subtle texture to the otherwise smooth puree. The lemon juice does double duty: it brightens the flavor and keeps the avocado from oxidizing to an unappealing brown.

Use very ripe fruit for both the pears and the avocado. Underripe pears will not blend smooth and lack sweetness. The avocado should give easily when pressed but not be mushy or brown inside.

Directions

Combine all ingredients in a blender or food processor and purée for approximately 1 minute.

Pour the puréed mixture into a glass dessert dish or parfait glasses and chill in the refrigerator for at least an hour.

Garnish with mint sprigs and serve cold.
