This is the bread for summer breakfast tables, made dead simple by the bread machine. Dried peaches and peach yogurt give the loaf its signature flavor, while a whisper of cinnamon and nutmeg adds aromatic warmth. Applesauce replaces some of the fat, keeping the bread moist without making it heavy.

Using dried peaches rather than fresh is the smart move for bread baking. Fresh peaches release water during baking that throws off the dough hydration, leaving you with a soggy or collapsed loaf. Dried peaches absorb moisture from the dough as they hydrate, distributing peach flavor without ruining the structure. Dice them small for even distribution.

Peach yogurt is doing double work as a flavor enhancer and a moisture/acid contributor. The acid reacts with the yeast and dairy to improve crumb structure, while the peach flavor reinforces the dried peach pieces. Plain or vanilla yogurt substitutes acceptably but loses the peach reinforcement.

Applesauce is the clever fat substitute that keeps this bread on the lighter side. Just two tablespoons add moisture and natural sweetness without adding the heaviness of butter or oil. The bread tastes rich but isn’t.
