Peach crisp is summer in a baking dish.

Sliced fresh peaches go into the pan naked (no need to toss them with anything), then a simple topping of flour, sugar, cinnamon, and butter gets cut into coarse crumbs and scattered over the fruit.

As it bakes, the peaches release their juices while the topping turns golden and crispy on top, tender where it meets the fruit below.

Pro Tips

  • Ripe peaches only: They should smell sweet and give slightly when pressed. Hard peaches won’t soften enough in 45 minutes.
  • Coarse meal texture: Cut butter in until the mixture looks like chunky sand, not fine powder. Those bigger pieces create the best crispy-tender contrast.
  • Serve warm: This is peak delicious right out of the oven with a scoop of vanilla ice cream or dollop of whipped cream melting on top.

Directions

Place peaches in a lightly-greased 8-inch square baking dish ; set aside.

Combine flour, sugar, cinnamon, and salt in a medium mixing bowl; cut in butter with a pastry blender until mixture resembles coarse meal.

Sprinkle mixture evenly over peaches in prepared dish.

Bake at 375℉ (190℃) F for 45 minutes or until golden brown.

Spoon into individual serving bowls; serve warm with whipped cream.
