Five ingredients and a food processor are all that stand between you and a vegan chocolate mousse with a bright orange twist. Tofu is the base here, and when blended until completely smooth, it mimics the silky texture of a traditional cream-based mousse without a drop of dairy.

Brown rice syrup provides the sweetness instead of sugar, giving the mousse a mellow, almost caramel-like quality that complements the bittersweet cocoa. It’s less sweet than a traditional mousse, which lets the chocolate and orange zest come through more clearly.

Processing the tofu a few chunks at a time is a detail worth following. Dumping it all in at once can overwhelm the food processor and leave you with a grainy texture. Add it gradually, let each addition blend smooth, then keep going. The final result should be completely lump-free, like thick pudding.

A splash of water thins the mousse to your preferred consistency. Start with a tablespoon and blend. You can always add more, but you can’t take it back.

Pro Tips

  • Use firm tofu, not silken. Firm tofu has less water and creates a denser, more mousse-like texture. Silken tofu makes it too runny.
  • Scrape down the sides of the food processor bowl between additions. Unblended tofu hiding on the walls gives you lumpy mousse.
  • Chill for at least 30 minutes before serving. The mousse firms up and the flavors develop as it cools.
  • Use fresh orange zest, not dried. Fresh zest has volatile oils that give a burst of citrus aroma that dried zest can’t match.

Variations

  • Mint chocolate: Replace the orange zest with ¼ teaspoon peppermint extract for a vegan mint chocolate mousse.
  • Peanut butter swirl: Drizzle 1 tablespoon of melted peanut butter over each dish and drag a toothpick through for a marbled look.

Directions

Place rice syrup and vanilla in a food processor.

Process, adding the tofu a few chunks at a time.

Then add cocoa and orange zest. Add water to thin as needed.
