Sliced oranges stacked back together with thin rings of red onion and fresh herbs between each layer, then drizzled with lime juice and olive oil. It’s a no-cook appetizer that looks like you spent time on it but takes about 15 minutes.

This style of orange salad has roots in North African and Mediterranean cooking, where the combination of sweet citrus and sharp raw onion is a classic pairing. The lime juice bridges the two flavors while the olive oil smooths everything out and adds richness.

Rebuilding each orange with onion and parsley between the slices turns a simple fruit into a layered, architectural appetizer. Each bite gives you sweet orange, pungent onion, and herby freshness all at once. A hit of cayenne on top adds subtle warmth that lingers.

Chef Tips

  • Slice the red onion paper-thin. Thick onion slices overpower the delicate orange and make the bites awkward to eat.
  • Use navel oranges for easy peeling and seedless slices. Blood oranges make a stunning visual upgrade when in season.
  • Let the assembled oranges sit for 10 minutes before serving so the lime juice and olive oil soak into the layers.
  • A light hand with the cayenne goes a long way. You want warmth, not fire.

Variations

  • Add sliced black olives and crumbled feta for a Mediterranean salad version.
  • Swap cilantro for fresh mint for a brighter, cooler herb note.
  • Sprinkle with toasted cumin seeds for a Moroccan-inspired finish.
