Raita is the unsung hero of Indian meals, the cooling, tangy yogurt side that calms the heat from curries and adds creamy contrast to dry tandoori dishes. This onion-tomato version is the most common style you’ll find on home tables across north India, fresh, fast, and infinitely better than anything you can buy in a jar.

Thinning the yogurt with milk is the key. Straight yogurt sits too thick on the plate; thinned, it pours and coats and dilutes spicy bites without overwhelming the palate. Aim for the consistency of buttermilk.

Chat masala is the flavor maker here. This Indian spice blend (also spelled chaat masala) brings tang, salt, and a slight sulfurous note from black salt that’s the unmistakable taste of Indian street food. The recipe says optional but it’s really not, this is what separates raita from plain yogurt with vegetables.

Dice the onion and tomato fine, about ⅛ inch. Big chunks make the raita feel like salad with yogurt; fine dice gives every spoonful a balanced bite of all three components.

Pro Tips

  • Use whole-milk plain yogurt, not Greek. Greek is too thick and tangy for proper raita texture.
  • Seed the tomato to remove the watery jelly, otherwise the raita gets watery as it sits.
  • Make this just before serving, raita doesn’t keep well overnight as the salt draws moisture from the vegetables.
  • A pinch of toasted cumin seeds, crushed, adds smoky depth.

Variations

  • Add diced cucumber for the classic three-way version (cucumber-onion-tomato).
  • Stir in fresh chopped mint or cilantro for an aromatic herbal lift.
  • Substitute roasted ground cumin for the chat masala for a simpler, equally delicious version.
