Cooking oatmeal in a half-milk, half-water mixture instead of straight water changes everything. The milk adds body, a subtle sweetness, and a creaminess that plain water oatmeal never achieves.

The recipe gives you two textures to choose from. For flaky oatmeal with distinct oat pieces, cook just until done and let it rest covered. For creamy oatmeal that’s smoother and more porridge-like, cook a bit longer and stir more often. Same ingredients, different technique, completely different bowl.

There’s also a chocolate version: swap the milk for chocolate milk and you’ve got a breakfast that tastes like dessert but still starts your morning with whole grain oats.

Kitchen Tips

  • Use old-fashioned rolled oats for better texture and a chewier bite. Quick oats work in a hurry but turn mushier.
  • Stir occasionally for flaky oatmeal, constantly for creamy. The stirring releases starch and controls the final texture.
  • Don’t skip the standing time after cooking. Covering the pan and resting for a few minutes lets the oats finish absorbing liquid and thicken up.
  • Watch the pot carefully once the milk mixture starts to boil. Milk boils over fast and makes a mess.

Directions

Add salt to milk and water in saucepan; bring to a boil.

For FLAKY OATMEAL: Stir in oats.

Cook 1 minute for quick oats, stirring occasionally.

Cook 5 minutes or longer for old fashioned oats.

Cover pan, remove from heat and let stand a few minutes.

For CREAMY OATMEAL: Stir in oats.

Bring to a boil and cook as above.

CHOCOLATE OATMEAL: Use 2 cups chocolate dairy drink in place of milk in above recipe.

Cook as directed.
