Oat flour, rolled oats, bran, whole wheat flour, and bread flour combine with grated carrots, applesauce, and cinnamon for a fiber-packed bread that actually tastes like something you’d want to eat, not a chore.
The grated carrots add natural sweetness and moisture to the crumb without making the bread taste like carrot cake. They’re subtle, contributing more to the texture and color than to an obvious carrot flavor. Applesauce serves as the fat replacement, keeping the bread moist without any butter or oil.
