20 minThis is a fast, satisfying pasta dinner built from ingredients most people already have on hand. Mushrooms sauteed with onion and garlic in butter form the base, then strips of ham get tossed in along with hot noodles and a hit of tomato sauce.
The nutmeg is the sneaky ingredient here. Just a pinch stirred into the tomato sauce gives the whole dish a warm, slightly sweet depth that rounds everything out. It’s a classic European touch you’ll find in a lot of German and Austrian noodle dishes.
Getting the mushrooms right makes all the difference. Slice them thin and let them cook undisturbed for the first couple of minutes so they brown instead of steaming. That golden color means flavor. Crowding them in the pan or stirring too early gives you pale, rubbery mushrooms.
Chef Tips
- Use a wide skillet for the mushrooms so they sit in a single layer. Overcrowding traps steam and prevents browning.
- Boiled ham (deli ham) works best here. Smoked ham is too overpowering and fights the mushrooms.
- Save a splash of the pasta cooking water before draining. Add it when tossing everything together to loosen the sauce and help the Parmesan coat the noodles.
- Grate Parmesan fresh, not from the green can. The texture and flavor difference is real.

- Creamy version: Skip the tomato sauce and stir in a few tablespoons of heavy cream with the Parmesan for a richer, more indulgent finish.
- Veggie swap: Replace the ham with sauteed zucchini or roasted red peppers for a vegetarian take.

Directions
Boil noodle in saltwater as directed on package, drain.
Chop the onion and the garlic very fine, and sauté in the butter until golden; add mushrooms sliced finely and simmer 5 minutes.
Cut the ham into small strips and with the mushroom mix mix under the noodles Season to taste. Prepare tomato sauce as directed and season with nutmeg if desired. Serve hot
