The whole thing comes together in the time it takes to boil the noodles.

The sauce technique that beginners get wrong is using high heat. Alfredo sauce should be built over low to medium-low heat. Boiling cream and butter together separates them into greasy oil and watery solids, while gentle warming keeps the emulsion smooth and silky. Melt the butter first, then add the half-and-half, keep the heat low, and whisk in the cheese gradually.

Freshly grated Parmesan is non-negotiable. The bagged shredded stuff contains anti-caking starches that prevent smooth melting. Real Parmigiano-Reggiano grated on a microplane or box grater melts cleanly into the cream and butter for that signature glossy sauce.

Egg noodles are an unusual choice for Alfredo, but they work beautifully here. The wider, eggier noodles hold more sauce than skinny fettuccine and have just enough chew to stand up to the rich coating. Directions

Start cooking noodles as package directs.

Over a low heat, melt butter and cream in a saucepan.

Stir in cheese, parsley, salt and pepper.

Reduce heat to low.

Drain noodles and pour in serving dish.

Pour in sauce and stir gently until noodles are coated.
