This cabbage soup gets all its flavor from one move: slowly frying the cabbage and five whole onions in butter for a full 25 minutes until they’re golden and caramelized. That’s the whole secret. No stock cube, no broth. Just patient browning that turns humble vegetables into something rich and deeply savory.

The potatoes cook separately in extra water, and that starchy potato water becomes your soup base. It gives the broth body without needing cream or flour to thicken it. Keep the potatoes in large dice so they hold their shape after the 30-minute simmer.

Canned tomatoes add brightness and acidity that cuts through all that buttery richness from the fried vegetables. Give them a rough crush with your hands before adding for chunky texture throughout.

Kitchen Tips

  • Don’t rush the frying step. Low and slow is what builds the deep golden color. Medium-low heat, stir every few minutes, and let it go the full 25 minutes.
  • The recipe calls for half a pound of margarine, which sounds like a lot, but it’s cooking fat for a big pot of soup. Use butter for better flavor if you prefer.
  • Season at the end, after everything has simmered together. The flavors concentrate as they cook, so early seasoning often leads to oversalting.

Variations

  • Brown sliced kielbasa or smoked sausage with the cabbage and onions for a one-pot meal with protein.

Directions

Use 3 times more the normal amount of water used to cook potatoes.

I just cover them and add water if necessary.

In a large pot, fry onion and cabbage in margarine slowly til tender and brown.

About 25 minutes.

Boil potatoes til cooked.

Add tomatoes and fried onion and cabbage.

Season to taste.

Simmer 30 minutes.

Sausage can be browned with the vegetables and added as desired
