This mushroom appetizer is the kind of party trick that makes you look smarter than you are. Three ingredients, two pounds of mushrooms, and an hour and a half of mostly hands-off simmering produce a small dish of glossy, deeply seasoned mushrooms that disappear off the platter the second they hit the table.

The technique is the surprise. After a quick saute in butter, a packet of Italian (or garlic) dressing mix gets sprinkled over the top and the whole pan covers up to simmer gently for 90 minutes. The mushrooms release their water, then reabsorb it along with the seasoning, ending up concentrated, browned around the edges, and impossibly savory.

No boiling. The recipe is firm about that. A gentle simmer is what coaxes the mushrooms to surrender their water slowly while the butter and seasoning concentrate around them. A hard boil breaks the texture and turns the dish greasy.

Kitchen Tips

  • Clean mushrooms with a damp paper towel or a soft brush, not running water. Mushrooms are sponges and waterlogged ones won’t brown or absorb flavor properly.
  • Leave smaller mushrooms whole and halve or quarter the larger ones so all the pieces cook at the same rate.
  • Use a heavy-bottomed pan with a tight-fitting lid. The slow simmer needs steady, moderate heat without scorching.
  • Toothpick-spear immediately. Cooled mushrooms are still excellent but warm ones with their butter glossy and aromatic are the move.

Variations

  • Use the garlic version of the dressing mix for a more aggressive, pungent flavor.
  • Add a splash of white wine at the start of the simmer for a brighter, more complex sauce.
  • Stir in 1 tablespoon of fresh chopped parsley just before serving for a pop of color and herb.

Directions

Sauté cleaned mushrooms in butter for 5 minutes.

Sprinke with the package of “Good Seasons” dressing mix.

Simmer covered, do not boil, for 1½ hrs.

Serve with toothpicks.
