60 minThis is the old-fashioned, custard-style mac and cheese that people actually mean when they say “like Mom used to make." No roux, no bechamel, no fussing over a stovetop sauce. Cooked macaroni, cheddar, and butter go into the dish, then a simple egg-and-milk custard gets poured over bread crumbs on top and baked until golden.
The egg custard is what sets this apart from modern stovetop versions. As it bakes, the eggs set the milk into a creamy, silky sauce that binds the cheese and pasta together. It’s richer and more cohesive than anything you can get from a packet.
Grated onion mixed into the pasta adds a savory sweetness without any crunch. It melts into the custard and disappears, leaving only flavor behind.
Kitchen Tips
- Beat the eggs and milk together thoroughly before pouring. Uneven distribution means some spots are custardy and others are dry
- Reserve some cheese for the very top so it melts into a golden, crispy layer over the bread crumbs
- Use bread heels crumbled by hand for a rustic topping. They create uneven pieces that crisp up at different rates for better texture
- Check at 20 minutes. The custard should be just set and the top golden. Overbaking dries out the custard and turns the mac and cheese rubbery
Variations
- Sharp cheddar upgrade: Use extra sharp cheddar for a more pronounced cheese flavor that holds up to the custard
- Bacon topper: Crumble crispy bacon over the bread crumbs before baking for a smoky crunch
- Mustard kick: Stir a teaspoon of dry mustard into the egg-milk mixture for a tangy bite that sharpens the cheddar
