Mock raspberry jam made from green tomatoes, sugar, and raspberry Jello. Just three ingredients, 20 minutes of boiling, and you have a sweet, fruity spread that tastes surprisingly like the real thing.

Three ingredients and a blender. That’s all it takes to turn a pile of green tomatoes into something that looks and tastes shockingly close to raspberry jam. The green tomatoes provide the body and a mild tartness, the sugar sweetens everything up, and raspberry Jello brings the color, flavor, and just enough set.

After blending the tomatoes and boiling them with sugar for 20 minutes, you stir in the Jello while the mixture is still hot. It dissolves instantly and transforms the whole pot from green tomato mush into a bright, ruby-red jam with genuine berry flavor.

This is a classic use-what-you-have recipe from gardeners who end up with more green tomatoes than they know what to do with at the end of the season.

Kitchen Tips

  • Skim the foam that rises during boiling. It doesn’t affect the taste but makes the finished jam cloudy.
  • This is a refrigerator jam, not a shelf-stable preserve. Keep it chilled or freeze it for longer storage.
  • Process the tomatoes until smooth for a traditional jam texture, or leave them slightly chunky for a rustic, preserves-style spread.

Variations

  • Use strawberry Jello instead of raspberry for a different berry flavor.
  • Add a squeeze of lemon juice before boiling for extra tartness that mimics real fruit jam more closely.
  • Stir in a tablespoon of pectin with the Jello for a firmer, more traditional jam set.

Directions

In blender or processor, process green tomatoes; add sugar. Boil 20 minutes.

Skim.

Add jello, stir.

Pour into sterilized jars.

It must be kept in the refrigerator!
