1 hrsDump everything in and press start. This bread machine loaf combines instant coffee and sugar-free mocha mix into a yeasted dough made with a blend of bread flour and rye flour. The result is a subtly sweet, coffee-scented bread with a hint of earthy rye depth and pockets of chopped pecans.
The applesauce is a sneaky ingredient here. It replaces some of the fat you’d normally see in enriched bread, keeping the crumb moist without adding butter or oil. The rye flour adds just enough earthiness to complement the coffee flavor without making the loaf dense or heavy.
Pecans folded into the dough give a nutty crunch that pairs naturally with the mocha notes. Brown sugar brings a gentle caramel sweetness that stays in the background. This bread smells incredible while it bakes, filling the kitchen with roasted coffee and toasted nut aromas.
