The 9-minute microwave cook with stirring every 3 minutes is the key. Microwaving in shorter bursts with stirring prevents hot spots that would scorch the brown sugar and break the texture. Don’t try to do it in one long burst; the bottom will burn while the top stays cool.
Beating the powdered sugar in with an electric mixer until the fudge starts to thicken is what creates the smooth fudgy texture. Stop the moment you see it begin to firm up; over-beating turns the fudge grainy and dry.
