1 hrsThese are meatloaf’s fun little cousins that bake in muffin tins for perfect portions.
Ground beef gets mixed with Italian sausage for extra flavor, then bound together with applesauce (keeps them moist), whole wheat breadcrumbs, and bran for fiber. Italian seasoning, sage, and Worcestershire add depth, and the whole mixture gets scooped into muffin cups and baked until done. The individual portions make them perfect for meal prep or kid-friendly dinners.
Serve them hot with mashed potatoes or cold in lunchboxes the next day.
Cooking Tips
- Use lean ground beef to prevent greasy muffin cups
- Applesauce adds moisture without adding fat
- Don’t overmix or meat cakes will be dense
- Let them rest 5 minutes in tins before removing for easier handling

Directions
Preheat oven to 350℉ (180℃).
Mix all ingredients together well.
Place ⅓ cup mixture in each of 16 muffin cups.
Bake at 350℉ (180℃). until done, about 1 hour. Remove from muffin tins. Serve hot or cold.
