Three ingredients. Fifteen minutes. That familiar crackle of crisp rice cereal folding into a pot of melted marshmallows is pure kitchen magic.

The trick here is low heat and patience. Marshmallows scorch fast, so keep the flame gentle and stir constantly until they melt into a smooth, glossy stream. Once you dump in the cereal, work quickly because the mixture sets up in minutes.

A buttered spoon (or one dipped in water) is a must for pressing the mixture into the pan. Bare hands or a dry spoon? Instant sticky disaster.

Kitchen Tips

  • Don’t pack too hard. Pressing with heavy force makes dense, tough squares. A light, even press keeps them chewy.
  • Fresh marshmallows matter. Stale ones won’t melt smoothly and create a grainy texture.
  • Cut with a greased knife to get clean edges without tearing.

Variations

  • Chocolate drizzle: Melt chocolate chips and drizzle over the top before they set.
  • Peanut butter swirl: Stir a spoonful of peanut butter into the melted marshmallows for a nutty twist.
  • Fruity version: Swap plain cereal for fruity crisp rice cereal for a colorful, kid-friendly treat.
