This ice cream pie is the kind of dessert that takes almost no effort but looks and tastes like you spent all afternoon on it. Softened vanilla ice cream gets swirled with dark amber maple syrup until smooth, poured into a pie shell, and frozen solid. Three main ingredients, zero baking, maximum maple flavor.

Dark amber maple syrup is specified for good reason. It has a stronger, more robust maple flavor than the lighter grades, and that intensity holds up against the richness of the ice cream instead of disappearing into the background. You want every bite to taste distinctly maple, not just vaguely sweet.

Letting the pie sit out for 10 to 15 minutes before serving is essential. Straight from the freezer, it’s rock hard and impossible to slice cleanly. That brief rest at room temperature softens the ice cream just enough to cut through smoothly while still holding its shape on the plate. Whipped cream and walnuts on top add richness and crunch.

Kitchen Tips

  • Soften the ice cream just enough to stir. Leave it on the counter for about 15 minutes. If it melts too far, the refrozen texture will be icy and grainy instead of creamy.
  • Mix until the syrup is evenly distributed. Streaks of concentrated maple syrup freeze into hard, chewy ribbons. You want a uniform flavor throughout.
  • Use a pre-baked pie crust or a graham cracker crust. Either works, but the crust should be fully ready before the ice cream goes in.
  • Freeze for a full 3 to 4 hours. Rushing it means a sloppy, soft pie that won’t slice.

Variations

  • Butter pecan ice cream instead of vanilla doubles down on the nutty-maple combination.
  • Caramel drizzle: Add a ribbon of caramel sauce on top before freezing for an extra layer of sweetness.
  • Candied walnuts instead of plain for a crunchy, sweet garnish that complements the maple even further.
