35 minA fast, clean vegetarian side dish that lets the vegetables do the talking. Baby carrots and mange tout (snow peas) get a quick steam, then a brief toss in a pan with soy sauce, crushed garlic, and chopped fresh ginger. Toasted sunflower seeds scattered on top add a nutty crunch.
Steaming the vegetables separately in stages is the smart move here. Carrots need a 5-minute head start because they’re denser; the mange tout only need 2 minutes to go bright green and crisp-tender. Adding them together from the start means mushy peas or crunchy carrots.
The pan toss with soy, garlic, and ginger takes just one minute. You’re not cooking the vegetables further, just coating them in a quick, savory glaze while the heat blooms the garlic and ginger. Any longer and you lose the snap.
Chef Tips
- Trim the mange tout before steaming. Pull the string from the seam; it’s tough and fibrous and ruins the otherwise silky texture.
- Crush the garlic rather than mincing. Crushed garlic releases its oils more quickly in the brief pan toss, giving maximum flavor in minimal time.
- Toast the sunflower seeds in a dry pan until golden before sprinkling. Raw seeds taste flat and starchy; toasted seeds are nutty and fragrant.
- Fresh ginger is a must. Dried ground ginger doesn’t have the bright, peppery bite that makes this dish pop.
Variations
- Sesame version: Replace the sunflower seeds with toasted sesame seeds and add a drizzle of sesame oil for an Asian-inspired twist.
- Chili heat: Add a pinch of red pepper flakes to the pan along with the garlic and ginger for a spicy kick.

Directions
Remove the tops from the carrots, then scrub them.
Bring a large steamer to the boil and steam the carrots for 5 minutes.
Add the mange tout and steam for a further 2 minutes.
Place the vegetables, soy sauce, garlic and ginger in a large pan and stir for one minute until thoroughly mixed.
Put into a large bowl and sprinkle with the sunflower seeds.
Serve.
