Magic truffles earn their name through sheer simplicity: just four ingredients (melted chocolate chips, sweetened condensed milk, salt, and vanilla or rum extract) come together into a smooth, fudgy candy that slices clean and tastes like it took hours.

Technically these are closer to a quick fudge than traditional rolled truffles, but the smooth, dense texture and rich chocolate flavor put them in the same league. The wax-paper lined pan makes unmolding effortless and the block format means you can cut clean squares or rough chunks depending on how rustic you want them.

Melting the chocolate without stirring is the small detail that matters. Stirring before everything’s melted introduces moisture from the steam, which can cause the chocolate to seize into a grainy mess.

Pro Tips

  • Use a real double boiler or a heatproof bowl over barely simmering water. Direct heat scorches chocolate fast.
  • Stir in the condensed milk only until just blended. Overmixing knocks the air out and dulls the gloss.
  • Chill at least an hour, ideally two. Underchilled truffles smear instead of slicing into clean squares.

Directions

Melt chocolate without stirring in top of double boiler.

Remove from heat and add condensed milk, salt and flavoring.

Stir only until blended.

Press into a block one inch high in wax paper lined pan.

Chill until firm.

Turn out.

Remove wax paper.

Cut into serving pieces.

Store in airtight container.
