Loshen kugel (Jewish noodle pudding) with broad egg noodles, apple juice, raisins, nutmeg, and chopped walnuts. A lighter, lower-sugar kugel baked golden and topped with nuts.

This kugel is lighter than most. Just one tablespoon of sugar and unsweetened apple juice provide the sweetness, and vegetable oil replaces the usual butter or schmaltz. The result is a noodle pudding that’s still rich and satisfying but doesn’t leave you in a food coma.

Broad egg noodles cooked and tossed with eggs beaten fluffy with sugar, apple juice, raisins, nutmeg, and oil form the base. The apple juice soaks into the noodles during baking and gives the whole kugel a fruity sweetness that refined sugar can’t replicate.

Nutmeg is the only spice, and it’s the right one. Its warm, slightly sweet flavor bridges the egg noodles and the raisins in a way that cinnamon (the more common choice) doesn’t.

Chopped walnuts or pecans sprinkled on top toast during baking and add crunch against the soft, custardy noodle interior.

Kitchen Tips

  • Beat the eggs and sugar until genuinely fluffy. This builds air into the kugel and keeps it light instead of dense.
  • Oil the casserole dish well. The raisins and noodle edges caramelize against the sides and stick aggressively.
  • The kugel is done when browned on top and set in the center. A slight jiggle is fine since it firms as it cools.
  • Serve warm or at room temperature. This is good either way and can be reheated the next day.

Variations

  • Cinnamon apple kugel: Add a teaspoon of cinnamon and diced fresh apples to the mixture.
  • Dairy version: Replace apple juice with sour cream and add cottage cheese for a richer, traditional dairy kugel.

Directions

Beat the eggs and sugar until fluffy.

Add the remaining other ingredients, except the nuts.

Pour into a well oiled 2 qt casserole dish or an 8 inch baking pan.
