10 minThis is a riff on nimbu pani, the spiced lemonade you’ll find at street stalls across India. Fresh lemon juice and lime juice together (not just one or the other) create a brighter, more complex citrus flavor, sweetened with maple syrup instead of the traditional sugar and spiked with freshly grated ginger.
Maple syrup dissolves instantly in cold water, which is why this recipe needs no simple syrup or heating step. It also brings a caramel-like richness that plain sugar can’t. The amount here is generous, but it needs to be since the combined citrus juice is tart.
The ginger hits you on the finish, a warm tingle at the back of the throat that makes this more interesting than flat lemonade. Grate it fresh on a microplane for the finest texture. Larger pieces will be stringy and unpleasant to sip.
The optional cayenne is tiny (an eighth of a teaspoon for the whole pitcher) but noticeable. It adds a subtle heat that builds slowly and makes you reach for another glass. Start with less if you’re not sure, you can always add more.
Serve it at room temperature or chilled. At room temperature, the ginger and spice come through stronger. Chilled, it’s more refreshing and the sweetness pulls back slightly.
