This is icebox cake from the era before refrigerators had freezers. No baking, no cooking. Ground marshmallows and dates get mixed with cream, rolled into a loaf, chilled, and sliced. What comes out of the fridge is dense, sweet, and chewy with a texture somewhere between a candy bar and a fruit cake.

Grinding the marshmallows and dates together creates a sticky, paste-like base that binds everything. The graham crackers add crunch and structure, the walnuts provide nutty contrast, and the cream holds it all together into a loaf that slices cleanly once chilled.

The rolling step matters. Pack the mixture firmly into a log shape so there are no air pockets. Air gaps mean crumbly slices instead of clean ones. Wrap tightly and chill for at least an hour, though longer is better. Overnight gives the cream time to soften the crackers slightly and meld all the flavors.

Serve in thin slices with a dollop of whipped cream on the side.

Kitchen Tips

  • Use a food processor to grind the marshmallows and dates together. A knife will take forever and leave uneven pieces
  • Wet your hands when shaping the log. The marshmallow mixture is extremely sticky
  • Wrap tightly in plastic wrap and chill on a flat surface so the log holds its shape
  • Slice with a sharp knife dipped in hot water for the cleanest cuts

Variations

  • Roll the outside of the log in crushed graham cracker crumbs for a coated finish
