1 hrsThis Hungarian-inspired dish layers paprika-dusted chicken breast over a bed of baked cabbage with sliced apples and onions, then tops the whole thing with melted Swiss cheese. It’s an unexpected combination that works beautifully: the cabbage turns silky, the apples go soft and sweet, and the cheese ties everything together.
The chicken gets browned first in butter with a generous coating of paprika, which builds a flavorful crust and gives it that signature Hungarian color. Then the cabbage bakes separately until almost tender before the apples, onions, and a sprinkle of sugar go on top. The chicken finishes on this vegetable bed, where the juices drip down and flavor everything below.
That final step of melting Swiss cheese over the top is what takes this from home cooking to something special. The cheese browns lightly in just five minutes and adds a nutty, creamy layer that brings the paprika chicken and sweet cabbage-apple base together.
Chef Tips
- Use Hungarian paprika if you can find it. It has more depth and warmth than standard supermarket paprika
- Slice the cabbage thick, about half an inch. Thinner slices turn to mush during the long bake time
- Core the apples but leave the skin on for color and to keep the slices from falling apart
- Don’t skip browning the chicken first. That step develops flavor you can’t get from just baking
Variations
- Smoked paprika version: Use smoked paprika instead of sweet for a deeper, smokier flavor throughout
- Sauerkraut swap: Replace the fresh cabbage with drained sauerkraut for a tangier, more traditional Eastern European flavor
- Gruyere finish: Use Gruyere instead of Swiss for a more intense, slightly sharper cheese melt
