These chicken wings get a head start in a hot oven to render the fat and crisp the skin before the glaze ever goes on. That initial blast of high heat is what gives you crispy edges instead of soggy, steamed skin under a pile of sauce.

The glaze is simple and bold: honey, soy sauce, chili sauce, and garlic powder. Once mixed with the par-cooked wings, everything goes back in the oven at a slightly lower temperature for another 45 minutes. The honey caramelizes slowly, building up a lacquered, sticky coating that clings to every wing. Watch for the sauce darkening too fast. Directions

Season chicken well.

Rub with oil and bake in a pre-heated 400 oven for 15 minutes.

Combine all remaining ingredients and mix with wings, reduce heat to 375 and bake another 45 minutes.

If the sauce start to caramelize, reduce the heat again.
