Three ingredients. That’s the whole recipe. Chicken wings get fried or baked until the skin crackles, then tossed in a simple sauce of melted butter and hot pepper sauce. This is the original Buffalo wing formula, and it works because it doesn’t try to be anything more than what it is.

The method gives you two options: deep-fry for that shatteringly crisp skin, or oven-bake on a sheet pan for easier cleanup. Both get the job done, but the deep fryer gives you that restaurant-style crunch in under 10 minutes.

Tossing the cooked wings in a covered bowl is the move. The lid traps steam just long enough to let the sauce coat every surface, then the wings go straight to the plate. No marinating, no breading, no waiting.

Pro Tips

  • Pat the wings bone-dry with paper towels before cooking. Surface moisture is the enemy of crispy skin, whether you’re frying or baking.
  • Cut the wings at every joint and discard the tips. The drumette and flat are where all the meat lives, and the tips just burn.
  • Adjust the butter-to-hot-sauce ratio to your heat tolerance. More butter mellows the burn; more sauce cranks it up.
  • Serve immediately. These wings lose their crunch fast once the hot sauce hits, so don’t let them sit.

Variations

  • Add a squeeze of fresh lime juice and a pinch of garlic powder to the sauce for a zestier, more complex wing.
  • Toss with a mix of honey and hot sauce for sweet-heat sticky wings.
  • Swap butter for ghee. It has a higher smoke point and adds a nuttier flavor to the sauce.

Directions

Cut wings at all joints.

Discard wing tips.

Place the 24 to 30 pieces in absorbent paper towels to dry.

DEEP FRYER: 375℉ (190℃) for 8 to 10 minutes or until crispy.

OVEN: Spread wings in single layer on cookie sheet.

Bake at 450 F for 25 mins.

Melt butter in sauce pan.

Add hot sauce and stir well.

Place cooked wings in covered bowl.

Pour sauce over wings.

Place lid on bowl and bowl.

Place on plate covered with paper towel.

Serve immediately.
