Old-fashioned hobo dinner is one of those no-fuss layered casseroles that practically builds itself. Spread ground beef across the bottom of a big pan, stack sliced potatoes, chopped onion, frozen peas, diced carrots, and celery on top, pour mushroom soup gravy over everything, and let the oven do its thing for two hours.

The layering order matters. Raw ground beef on the bottom puts the protein closest to the heat source where it browns and renders, while the vegetables steam above it in the trapped moisture. The cream of mushroom soup thinned with water becomes a gravy that seeps down through every layer as it bakes, keeping everything moist and pulling the flavors together.

Slice the potatoes thin, about ¼ inch thick, so they cook through in the same time as the meat. Thick-cut potatoes will still be crunchy in the center after two hours, and nobody wants that. The peas go on frozen and thaw perfectly during the long bake.

Pro Tips

  • Press the beef layer flat and even. Clumps of meat cook unevenly and leave dry spots. A solid inch-thick layer across the bottom gives you consistent results.
  • Don’t peek for the first hour. Lifting the lid releases steam that the vegetables need to cook through.
  • Season each layer as you go. Salt and pepper between layers seasons more evenly than trying to season the whole assembled dish at once.

Variations

  • Chicken swap: Use boneless chicken breast cut into strips instead of ground beef for a lighter version.
  • Cheese top: Sprinkle shredded cheddar over the top during the last 15 minutes for a melted, golden crust.

Directions

Cover botom of large pan 1” with hamburger, salt and pepper.

Put on 1 layer of sliced, uncooked potatoes, then onion, chopped.

Cover with peas.

Add carrots and celery.

Salt vegetables as layered. Add water to 1 can mushroom soup making it gravy consistancy.

Pour over all.

Bake 2 hours at 350℉ (180℃).

Can also use boneless chicken breast in place of hamburger.
