Sweet, chewy bar cookies loaded with walnuts, dates, and orange marmalade. Despite the name, these hardtack bars are soft, fruity, and utterly addictive.

These hardtack bars are actually soft, chewy, and bursting with chopped dates, crunchy walnuts, and bright orange marmalade.
They bake up thick and get cut into satisfying squares while still warm.
Baker’s Notes
- Chop dates and walnuts finely for even distribution throughout the batter
- Cut into squares while warm for clean edges
- Store in an airtight container; they actually get chewier after a day

Directions
Sift ingredients together.
Add the remainder of ingredients; mix well.
Bake about 1 inch thick on a cookie sheet in a moderate oven at 375℉ (190℃) (F), for about 45 minutes.
Cut into squares while warm.
