The sauce starts as a basic roux (butter, flour, milk) but the brown sugar and prepared mustard shift it into something closer to a honey mustard glaze. That sauce coats the pasta, the cubed ham, and the apple slices, which soften in the oven and release their juice into the dish.
A crunchy bread crumb topping tossed in melted butter goes on last. It bakes into a golden, crispy lid that cracks when you dig in.

- Cook the macaroni just until al dente. It continues cooking in the oven for another 35 minutes. Fully cooked pasta turns to mush in a casserole.

Cook macaroni in boiling salted water until just tender, 8 to 10 minutes; drain.
In large saucepan melt the ¼ cup butter; blend in flour, brown sugar, mustard, salt and pepper.
Add milk all at once; cook and stir until thickened and bubbly.
Stir in cooked macaroni, ham and apple slices.
Turn mixture into a 2-quart casserole.
Combine bread crumbs and the 2 tablespoon melted butter; sprinkle over casserole.
Bake, uncovered, at 350℉ (180℃) F for about 35 minutes.
