1 hrsThese brownies are fudgy, intensely chocolatey, and topped with a layer of melted peppermint patties that turn into a smooth, minty chocolate frosting right in the pan. No separate frosting recipe needed.
The brownie base uses an unusual technique: cocoa and baking soda get mixed with hot oil and boiling water before any other ingredients go in. This blooms the cocoa (unlocking deeper chocolate flavor) and activates the baking soda early, which creates a fudgier, denser texture than the typical creaming method. The result is brownies that are chewy and rich, not cakey.
The peppermint patty topping is the genius move. While the brownies are still screaming hot from the oven, you lay the patties on top and slide everything back in for just 3 minutes. The patties soften completely, and you spread them into an even, glossy mint chocolate layer. As it cools, that layer sets into something that tastes like a giant thin mint sitting on top of a brownie.
Kitchen Tips
- Arrange the peppermint patties in a single layer while the brownies are hot. Work fast before they start to cool.
- Spread the softened patties with an offset spatula for the smoothest, most even layer.
- Let the brownies cool completely before cutting. The mint layer needs to firm up or it smears everywhere.
- Use a sharp knife dipped in hot water for the cleanest cuts.
Variations
- Use dark chocolate peppermint patties for a more bittersweet mint layer.
- Add a handful of chocolate chips to the batter for extra gooey chocolate pockets.
- Sprinkle crushed candy canes over the melted patty layer before it sets for a festive holiday version.
Ingredients
Directions
Stir cocoa and baking soda in mixing bowl, blend in half of the oil, add boiling water; stir until mixture thickens.
Stir in sugar, eggs, remaining oil, stir until smooth. Add flour, mint flavoring and salt, blend very well together.
Pour into lightly greased 13 X 9 inch baking pan or two 8 inch sqare pans.
Bake at 350 degress F for 35 to 40 minutes for big pan, about 30 to 32 minutes for two small pans.
While the brownies are still hot, arrange the cream filled mint patties on top, bake another 3 minutes than spread all evenly around. Let cool, cut into squares.
