The blending step is what transforms this from a bowl of wet oats into an actual waffle batter. Processing until smooth breaks the oats down into a thick, pourable consistency that spreads evenly in the iron. A food processor handles it in one batch; a blender needs a few rounds.
Eight to 10 minutes on high heat sounds long for waffles, but without fat in the batter, they need that extra time to dry out enough to crisp. Pull them too early and they’ll be floppy and gummy. The extra minutes are what give them golden, crunchy edges.
