The caramelized sugar adds a deep, sweet complexity that mimics what you’d get from hours of caramelizing onions, and the acidity balances the richness of the beef broth. Plus a touch of vinegar sharpens everything further.
The onions cook in butter until golden (not browned, which is an important distinction). Golden onions are sweet and soft. Browned onions can turn bitter, and with the cola already adding sweetness, you don’t want any harsh notes fighting for attention.
French bread slices get toasted on one side under the broiler, flipped, loaded with grated Parmesan, and broiled again until the cheese turns golden and crusty. Floated on top of the hot soup, they soak up the broth from below while staying crisp and cheesy on top.

- Use regular Coca-Cola, not diet. The real sugar is what creates the caramel flavor in the broth. Diet sweeteners taste metallic when heated.

Ingredients
Directions
In a heavy saucepan, melt the butter/margarine.
Add onions and cook until they are golden, do not brown.
Add the undiluted beef broth, 1 soup can of water, Coca-Cola, salt, vinegar, and pepper.
Cover and simmer 20 to 25 minutes.
In a broiler, toast one side of the French bread slices.
Turn and generously sprinkle with the Parmesan cheese. Toast until browned. Into deep bowls, ladle the soup and top with the toast, cheese-sided up.
Makes 4 servings or about 6 cups.
