This is chocolate stripped to its most luxurious form. Semisweet chocolate melted into heavy cream creates a rich, silky ganache that doubles as a dessert sauce, a dip, or a standalone treat spooned into small cups.

Three ingredients. Ten minutes. No technique beyond gentle stirring. The quality of your chocolate is everything here since there’s nothing else to hide behind. Use the best semisweet you can find, and the difference will be obvious.

French praline topping adds the signature crunch and caramelized nut sweetness. Fold it in at the last moment to keep the texture, or sprinkle it over each serving so it stays crisp against the warm, glossy chocolate.

Chef Tips

  • Chop the chocolate finely before adding it to the cream. Smaller pieces melt faster and more evenly, reducing the risk of grainy spots.
  • Heat the cream gently. You want it hot but not boiling. Boiling cream can break the emulsion and make the ganache oily.
  • Stir slowly and steadily. Vigorous whisking introduces air bubbles that dull the glossy finish.
  • Serve warm as a sauce, or let it cool to room temperature for a thicker, more spoonable consistency.
