6 hrsThe beauty of these layered bars is the method: melt butter in the pan, sprinkle the layers on top one by one, and bake. No mixing bowls, no creaming butter, no beating eggs. Each layer goes directly into the baking pan and the sweetened condensed milk poured over everything acts as the glue that binds it all together.
The base is a chocolate graham cracker crust made by stirring cocoa powder and sugar into graham cracker crumbs, then pressing them into the melted butter at the bottom of the pan. Sweetened condensed milk goes over the crust, then chocolate chips, raisins (or dried apricots or mini marshmallows), and chopped nuts get scattered on top and pressed down firmly.
That 6 to 8 hour rest at room temperature after baking is the step most people skip, and it makes all the difference. The condensed milk continues to set and the layers bond together so the bars hold their shape when cut. Rush it and they fall apart.
Pro Tips
- Press the nut layer down firmly before baking. This ensures the condensed milk reaches the top layer and everything sticks
- The bars should be lightly browned, not dark. Condensed milk burns easily and turns bitter
- Cover with foil during the rest period to keep the surface from drying out
- Use a sharp knife dipped in hot water for the cleanest cuts
Variations
- Tropical version: Use dried pineapple and shredded coconut instead of raisins
- Peanut butter drizzle: Melt peanut butter and drizzle over the cooled bars for a chocolate-PB combination
- S’mores bars: Use mini marshmallows instead of raisins for a s’mores-inspired take
