25 minA complete salmon, potato, and broccoli dinner arranged on a single platter and microwaved in about 10 minutes. This is weeknight speed with a presentation that looks like you spent real time plating.
Sliced red potatoes ring the outside of the platter and get a 3-minute head start since they need the most time. Salmon pieces nestle in a ring inside, broccoli florets mound in the center, and a squeeze of lemon goes over everything before the final 8-minute cook.
The dill sauce pulls it all together: nonfat yogurt mixed with fresh dill, chives, rice vinegar, and black pepper. It’s tangy, herbaceous, and light enough to complement the fish without weighing down the plate. Mix it first and chill while the platter cooks.
Pro Tips
- Overlap the potato slices slightly so they cook evenly in the ring formation
- Give the platter a half-turn at the 4-minute mark for even microwave cooking
- The fish is done when it flakes easily with a fork and is opaque through the center
- Make the dill sauce ahead and keep it cold for the best contrast with the hot fish
Variations
- Use cod or halibut fillets in place of salmon
- Swap broccoli for asparagus spears or green beans
- Add a teaspoon of Dijon mustard to the yogurt sauce for a sharper flavor
