6 hrsThis is one of those magic upside-down sheet cakes from the 1970s Southern dessert tradition, where layering everything in reverse creates a cake that frosts itself in the oven. Cherries sit on the bottom, cherry Jello and Dr. Pepper-spiked syrup pour over, marshmallows scatter on top, and the yellow cake batter goes on last. During baking, the layers swap places.
The science is satisfying. The marshmallows melt into a sticky white layer that floats up through the rising cake, while the Jello and cherries sink to settle on top as a glossy cherry topping. When you flip it after cooling, you get a finished cake with built-in fruit glaze and a marshmallow ribbon.
Dr. Pepper is the unsung hero ingredient. The 23-flavor soda adds a warm, faintly fruity caramel undertone that plain water never could. Three-quarter cup goes in the batter, and a quarter cup joins the cherry-jello layer, so the flavor runs all the way through.
A full 3 to 4 hours of refrigeration after the 45-minute cool is required. The jello layer needs time to set firm enough to slice cleanly.
Kitchen Tips
- Use a yellow boxed cake mix as specified. Other mixes can shift the flavor balance.
- Drain the cherries well but save every drop of syrup. The reserved syrup carries the cherry flavor in the jello layer.
- Don’t stir after assembly. The layers need to settle on their own during baking.
- Pull when the top springs back to gentle touch. Over-baking dries out the cake side.
Variations
- Use black cherry soda or root beer in place of Dr. Pepper for different flavor twists.
- Swap the cherry Jello for raspberry Jello and use canned raspberries for a similar effect.
- Top each slice with whipped cream and a maraschino cherry for an old-school cherry-Coke float garnish.

Directions
Arrange cherries evenly on bottom of a greased 9 x 13 pan.
Preheat oven to 350℉ (180℃).
In a small saucepan, combine the cherry syrup, 1 package of cherry jello and ¼ cup Dr. Pepper; gently heat until jello is dissolved.
Add almond extract and cool slightly.
In a large mixing bowl, combine yellow cake mix, 1 pack cherry jello, oil, eggs and ¾ cup Dr. Pepper.
Beat on high for 3 to 4 minutes.
Pour cooled jello mixture over cherries in pan.
Sprinkle evenly with the minature marshmallows and then carefully and evenly spoon the batter mix over the marshmallows.
Bake for 40 to 45 minutes.
Cool on rack for 45 minutes.
Chill 3 to 4 hours.
